This involved diving to the bottom of deep, muddy ponds to collect seeds from the water lily plant, euryale ferox. “I used to dive in 7 to 8 feet of water for hours a day,” Shahni recalls. The work was grueling and dangerous, with divers facing cuts from the plant’s thorns and enduring long hours submerged in murky water.

Fox nuts, prized for their high content of B vitamins, protein, and fiber, are considered a superfood by many. They are often consumed as a snack and used in various dishes, such as kheer, a popular milk pudding. Despite the demand, traditional harvesting methods were exhausting and limited the income potential for farmers.

The Shift to Field Cultivation

In recent years, a significant change has taken place in fox nut cultivation in India. Farmers have begun growing the plants in fields with much shallower water, making the process less labor-intensive and more profitable. “Harvesting seeds in just a foot of water means I can make twice as much money in a day,” Shahni explains. While still challenging, the new method is a vast improvement over the old way of working.

This shift in cultivation practices can be largely credited to the efforts of Dr. Manoj Kumar, a Senior Scientist at the National Research Centre for Makhana (NRCM). About ten years ago, Dr. Kumar realized that expanding makhana cultivation in deep ponds was not sustainable. He helped develop techniques for growing fox nuts in shallow fields, which have taken off over the past few years. “With our innovations, growing fox nuts is now as easy as any crop grown on land,” Dr. Kumar says.

Innovation Boosts Farmer Income

The innovations in fox nut cultivation in India have not only made the process easier but have also significantly increased farmers’ incomes. By experimenting with different seeds, NRCM found a variety that is more resilient and productive, leading to a threefold increase in farmer earnings. This new method has also provided a solution for farmers dealing with unpredictable weather conditions and floods, which have become more common in Bihar in recent years.

As a result of these innovations, the area dedicated to fox nut farming in India has grown dramatically. In 2022, the land used for cultivation reached 35,224 hectares, nearly three times what it was a decade ago. This surge in production reflects the growing recognition of fox nuts as a valuable and sustainable crop.

New Opportunities for Farmers

Dhirendra Kumar is one of the many farmers who have embraced fox nut cultivation in India. Although he grew up on a farm, Kumar was initially reluctant to follow in his father’s footsteps. “As farmers, we always grew wheat, lentils, and mustard but ended up losing a lot of money,” he says. Floods often destroyed their crops, making traditional farming a risky venture.

While studying for his PhD, Kumar met a scientist working on fox nut cultivation and decided to try growing the crop on his family’s land. The results were astounding. “In the first year, I made a profit of £340 [US$432],” Kumar reports. He now grows fox nuts on 17 acres of land and employs about 200 local women to help with the planting. “My aim is to provide jobs to as many farmers as possible so they don’t leave farming because of uncertainty in agriculture,” he says.

Processing Innovations Lead to Higher Quality

The transformation in fox nut cultivation in India isn’t limited to the fields. Significant advancements have also been made in the processing of fox nuts, particularly at Madhubani Makhana, a leading cultivator and exporter of the crop. Traditionally, once fox nuts were harvested, they were washed, roasted, and then popped using a mallet-like tool. This method was laborious, unhygienic, and often resulted in injuries.

Shambhu Prasad, the founder and chief executive of Madhubani Makhana, recognized the need for a more efficient and safer process. In partnership with NRCM, his company developed a machine that roasts and pops the fox seeds. “This has helped us increase the quality and the production of fox nuts,” Prasad says. The new machines have been integrated into his manufacturing plant, significantly improving productivity and safety.

Rising Demand and Future Challenges

As fox nut cultivation in India continues to grow, so does the global demand for this nutritious superfood. While innovations in farming and processing have boosted production, they may not be enough to meet the increasing demand. Prasad notes that substantial increases in production will be necessary to bring down prices, which are expected to remain high as the popularity of fox nuts rises worldwide.

Back on his farm, Dhirendra Kumar is optimistic about the future of fox nut cultivation in Bihar. “It’s the beginning of innovation in Bihar when it comes to fox nut harvesting. It will change the landscape of the state,” he says. The success of fox nut farming in India offers a glimpse into how innovation and adaptability can revolutionize traditional agricultural practices, bringing new opportunities and prosperity to farming communities.
